WINERY: rests in the historic Barrio de Las Cuevas in Cerrillo de Verballe, consisting of some 350 wineries all with openwork carved into the rock. Years ago farmers of San Asensio developed their wines in their own winery. Today these wineries are one of the few growers who continue with that work. This winery is perched on ancient fretwork sixteenth century, those who keep their wines rest.
The winery inside is home to underground cellars in stone sixteenth century by which visitors can take a tour with guided tour. They reach a depth of 14 meters and maintain a constant temperature of 13 ° throughout the year for optimal wine preservation. The combination of their wooden vats and concrete do understand the evolution that has been the history of wine over time.
